Pandan Butter Cookies

Ingredients


  • 150g

    SCS Salted Butter, softened

  • 80g

    Icing sugar

  • 1

    Large egg yolk

  • 1 tsp

    Pandan extract

  • 180g

    All-purpose flour

  • 20g

    Cornstarch

Directions


  1. In a mixing bowl, cream together the softened SCS Salted Butter and icing sugar until light and fluffy.
  2. Beat in the egg yolk and pandan extract until well combined, creating a light green mixture.
  3. Sift together the flour, cornstarch, and salt. Gradually fold into the butter mixture until a soft dough forms.
  4. Preheat oven to 160°C (320°F). Roll the dough into small balls, about 1 inch in diameter. Place them on a lined baking tray, slightly flattening each with a fork to create a pattern.
  5. Bake for 15-18 minutes or until the edges are lightly golden. Allow to cool completely on a wire rack.
  6. Store in an airtight container to keep them fresh!
