Mexican Wedding Cookies

Mexican Wedding Cookies

I quite enjoy playing and rolling around in the snow. These cookies remind me of those great times! Little round cookies, all nutty, rolled in powered sugar! These are really popular during the holidays as well as weddings and other festive occasions.
INGREDIENTS:
225g SCS Salted Butter
65g SIS Icing Sugar (sifted)
1 tsp Vanilla Extract
200g Sunshine Plain Flour
100g Chopped Pecans (toasted)
1. Preheat the oven to 180°C.
2. Cream butter and sugar together until smooth.
3. Add in the vanilla and rest of the ingredients. Mix until just combined.
4. On a sheet pan lined with baking paper, drop heaping teaspoons of batter onto the pan and bake for 8 to 10 minutes. (For a nicer shape, refrigerate the batter until firm enough to shape with your hands.)
5. Let the cookies cool and coat with icing sugar before serving.
